Pot Lucky Leftovers


Pot Lucky Leftover Night. It’s when we use what we had over the weekend and reheat or add to the dish to make dinner complete.  Today I decided to add snaps to my leftover black-eyed peas. “Lucky is as lucky does“.  You know Pot Lucky couldn’t help but love this quote. Yesterday’s cornbread was very good and complimented the peas known to represent the promise of a new year of luck and money.  We all can use that. So get your pots ready for some luck and a promise of prosperity in 2017. It ‘s not too late.


  • 16 oz. package of black eyed peas
  • Pick out any foreign substance or particles
  • Wash in cold water a few times to ensure cleanliness
  • Place beans in a large pot containing at least 2 cups of cold water above the beans
  • Rinse, trim and snap green beans in half and add to the pot
  • Salt to taste
  • 1 tablespoon of canola oil
  • 1/8 teaspoon of cayenne pepper
  • 1 clove of garlic, finely chopped
  • 1/2 onion, finely chopped
  • Cook on medium heat for 1 hour or until beans are soft
  • Remainder:  the water should remain above the beans even when they are cooked well
