- Season catfish with black pepper, a dash of cayenne pepper and garlic powder.
- Fill deep fryer or deep pot with no more than 1/3 full of Canola Oil.
- Heat oil on medium – high heat.
- Evenly coat seasoned catfish with 2 cup flour and 1/2 cup cornmeal add paprika to the breading mix
- Fry fish, a few pieces at a time, until light golden brown.
- Drain on paper towels.
