Fried CatFish

  1. Season catfish with black pepper, a dash of cayenne pepper and garlic powder.
  2. Fill deep fryer or deep pot with no more than 1/3 full of Canola Oil.
  3. Heat oil on medium – high heat.
  4. Evenly coat seasoned catfish with  2 cup flour and  1/2 cup cornmeal add paprika to the breading mix
  5. Fry fish, a few pieces at a time, until light golden brown.
  6. Drain on paper towels.
