Flapjacks

Ingredients:

  • 2 cups sifted flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 2 eggs
  • 2 cups of buttermilk or whole milk
  • 2 tablespoons of melted butter

Instructions:

  • Sift flour, salt, soda, and sugar together.  Beat eggs until light, add milk, then gradually add to flour mixture.  Beat until smooth and lump-free and add butter.  Pour batter into pitcher or large measuring cup with spout to assist with the pour.  Heat and grease griddle.  Pour enough batter in about 5 inches in diameter. Use more or less batter for the desired size flapjack desired.  Cook until brown and flip over, until the other side is brown.  Makes 24 flapjacks.  Serve with bacon or use strawberries with a sprinkle of confectioners’ or powdered sugar.

On Valentine’s Day you can serve them with strawberry maple syrup♥
