Salmon& Shrimp Hash

Transform your leftover meal to a crispy creation worthy of a breakfast delight!! I tossed salmon, shrimps, green and red peppers, onions and served them with a cheddar cheese omelet and whole wheat toast.

Ingredients:

  • 1 tbsp. olive oil
  • 1 small onion
  • 1 medium red pepper
  • 1 medium green pepper
  •  salmon cut into chunks
  • shrimps
  • parsley
  • 4 eggs
  • cheddar cheese

Directions:

  • Heat oil over medium heat in a non-stick skillet.  Add peppers and onion. Sautè  for 5 minutes.Stir in salmon and shrimp; heat.
  • Wipe out skillet. Add eggs and cheese.  Cook until done and serve.
