Grilled BBQ Jerk Chicken Breast & Thyme Potatoes

I decided to pair the Cabernet Sauvignon with grilled chicken.  My meal consisted of fresh green string beans and thyme potatoes.

Ingredients:

  • skinless chicken breasts
  • white potatoes
  • string beans
  • bbq sauce (any brand)
  • jerk seasoning/sauce (pre-made)
  • fresh thyme (potatoes & chicken)
  • pepper (potatoes & chicken)
  • salt
  • paprika (chicken & potatoes)
  • cayenne pepper (string beans)
  • garlic potatoes & chicken)
  • dried onion seasoning (potatoes)
  • chopped onion (chicken & green beans)
  • butter (string beans)
  • organic sunflower oil (potatoes)
  • canola oil (chicken)
  • water

Directions: Grilled Chicken

  • Clean  & Season chicken breasts with jerk seasoning/sauce, thyme, onion, pepper, paprika, bbq sauce for marinate for 2 -6 hours
  • Preheat oven at 350º
  • Pour 3 tablespoons of canola oil in the bottom of a baking pan & place chicken breasts in baking pan
  • Bake in oven for 1 hour or until browned on both sides

Directions: Green Beans

  • Clean and drain green beans
  • Snip off both ends of green beans
  • Snap or cut the bean in half
  • Add chopped onion 4 tablespoons of butter to the bottom of pan & simmer for 1 minute
  • Add beans, salt and peppers to a large pot with 2 cups of water
  • Cover pot and allow the beans to cook on medium heat
  • Stir to ensure the beans are evenly cooked as desired for 30 minutes

Directions: Thyme Potatoes

  • Clean and Cut potatoes horizontally into 2″ slices (leave on skin if desired)
  • Mix ingredients on potatoes to ensure even distribution in a baking
  • Preheat oven at 350ºpan
  • Pour sunflower oil on top of potatoes &  2-3 tablespoons of water to bottom of baking pan
  • Bake for 30-35 minutes or until brown and soft/ as crisp as desired
