Lemon Pepper Salmon

Fresh salmon, cherry tomatoes and asparagus can all be wrapped up in foil for an easy and delicious recipe, with added benefit of a quick clean up.
  • 2 salmon filets
  • 3 tablespoons olive oil

  • 2 garlic cloves, minced

  • 1/2 teaspoon lemon pepper

  • 1 teaspoon onion powder

  • 1/4 teaspoon dill

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried parsley

  • 1/2 teaspoon salt

  • Juice of 1/2 a lemon

  • Lemon slices

  • Assorted fresh vegetables, such as asparagus, cherry tomatoes and zucchini slices

  1. In a bowl, mix together the olive oil, cloves, lemon pepper, salt, onion powder, dill, thyme, parsley, and lemon juice.
  2. Take a 16- to 18-inch piece of heavy-duty aluminum foil and place one salmon filet in the center. Surround the salmon with vegetables.
  3. Drizzle the olive oil mixture over the salmon and vegetables. Add a couple of lemon slices. Create a pouch out of the aluminum foil by folding it over and closing both ends.
  4. Repeat the steps for the second salmon filet.
  5. Place both pouches side-by-side in a 13×9-inch baking dish and bake in a 400-degree oven for approximately 30 minutes or until done.
